It doesn’t get easier than this simple vinaigrette dressing. Simple, healthy and fast – this dressing adds punch to any salad.
Three ingredients is all you need – the most basic of ingredients even. Virgin olive oil, balsamic vinegar and some dijon mustard. Ingredients that are easy to store so you’ll have them around all the time – this is a great default dressing for a quickly thrown together salad on the weeknight.
I good way to mix the ingredients is to save smaller jars so you can just put the lid on and give the vinaigrette a quick shake. This also makes for easy storage that you can chuck into the fridge if you have left over salad.

I try not to put the salad dressing on the actual salad until it’s served on the plate, otherwise the leftovers in the bowl will get soggy and won’t save for leftovers the next day.
Put any leftover salad into an airtight container and chuck the leftover dressing into the fridge in a small jar. It’s usually not much but enough for another salad the next day for lunch or dinner.
