A light and tasty rice for quick weeknight cooking.
This rice is simple and super easy to prepare. I usually serve this with a fish main or some kind of rice bowl with veggies. It’s pretty light, simple tasting but has a bit of punch with the chilli added (depending on how much you like to put in).
Once the rice is cooked
- Add the lime and a small spoonful of chilli, stir it in with the rice.
- Taste to fine tune your flavors, occasionally you might want to add more lime or chilli.
Note: It’s always best to go less chilli and add more as you go, you can’t go back once it’s too hot.
Serving your rice
The rice will keep warm while you cook everything else – making rice super easy to cook for a side dish. While it simmers for 15 minutes you can be cooking your mains, making a salad or simply enjoying a glass of red while you chill in the kitchen.
When dinner is ready simply spoon some rice onto a plate with your main dish – it will still be warm and ready to go.
