A simple, homemade granola to start off your day. This healthy granola will kick start your day and usually keeps me going until lunch.
I’m not a huge breakfast person during the week… too much to do first thing in the morning, too many moving parts with three kids and no real time to make anything that gets me inspired to sit down and eat.
That’s why I love my granola. A scoop of yoghurt, a quick pour of granola and a dash of milk. Add whatever fruit you can find in the fridge to top it off and I have an easy, great tasting breakfast.
I need something that won’t go soggy when I have to put it down and dress a random child for school, something that stays consistently wonderful tasting in the midst of the morning chaos and something that is healthy and will start your morning right.
Serving your granola
Serve your granola over a spoonful of greek yoghurt with a dash of milk.
Any fresh fruit you have in the fridge or pantry can liven your granola up including strawberries, dried fruit, raisons, mango, pomegranates, etc.
Our house has a never ending cycle of fruit going through the fridge depending on the day or what the kids have cleaned out the previous day.
This makes granola quite dynamic and as long as you have that foundation of granola and yoghurt, your morning bowl of granola can vary quite a bit each morning.
Bonus tip for parents – when things are hectic in the morning and you’re in full multi-task mode you can put your granola down and come back to it and it won’t be soggy or cold or stale… it’s still all good to eat – this small detail makes me a happy dad in the morning.
